Information for people working in canteens

People diagnosed as coeliacs must have a gluten free diet to stay healthy. If gluten is consumed the intestinal villi are destroyed and the body cannot absorb the nutrition needed. Gluten can be found in wheat, rye and barley.

Oats do not contain gluten but get contaminated on its way to the consumer ( in mills, containers, fields or various places where it is treated ).

There´s a special, so called “pure oats”, that most gluten intolerant people can eat. But many coeliacs are so sensitive to that type of oats that one little breadcrumb is enough to cause an inflammation of the intestine. That´s why extremely careful preparation of gluten free food is necessary. Don´t use the same knife and cutting board as you did for ordinary bread. Please use a special butter dish. Use a different frying pan to the one you use when frying food in breadcrumbs, flour or anything else containing flour. There are special gluten free flour mixes used instead of ordinary flour.
